Recipe Round up!

Stromboli

- 1 bag frozen bread dough
- pam spray
- stuffing is up to you....


some suggestions....
  • ham & cheese
  • cheese steak w/fried onions
  • Buffalo chicken dip
  • pepperoni, salami & cheese
  • broccoli & cheese
  • tomato, spinach & mozzarella

~ follow the package directions on the bag of dough to let it thaw out. I let the dough sit out overnight, thaw & rise covered by pam sprayed saran wrap. Once the dough is ready, roll it out and place the stuffing in the middle of the dough, roll it up and place in pam sprayed aluminum foil. Bake at 375 for about an hour.

Fresh greenbeans with mini-meatballs

  • 1 lb of fresh stringbeans
  • white rice
  • 1 lb ground beef  (use your own meatball recipe or you can use this one)
  • 1 can of seasoned diced tomatoes
  • 1 small can of tomato sauce
  • salt & pepper to taste
-in a sauce pan, cook tomatoes & sauce. Make meatballs, drop in sauce until cooked thoroughly. Cook beans and rice in separate pots to your liking. Serve in a layered form...rice..beans...meatballs with sauce.

Recipe Round Up!

I totally stole this recipe from this blog and can't wait to try it!! Sounds delish!

-a small can of black beans rinsed and strained
-16 oz of fresh corn on the cob or a bag of frozen corn
-1 green pepper chopped
-a bunch of cherry tomatoes chopped or large tomatoes chopped
-avocado cut into bite size pieces
-some cilantro chopped
-a 1/4 cup of red vine vinegar
-a couple tablespoons of olive oil & 2 t Cumin or to your liking

AND a bag of tortilla chips

Recipe Roundup!

Cannoli Dip

8 oz cream cheese, softened
½ cup butter, softened
¼ t. vanilla
¾ cup powdered sugar
¾ cup mini chocolate chips
Box of graham crackers (or I like to use Stacy's Cinnamon & Sugar Pita chips - if you can find them!)
~Whip everything together, sprinkle with some extra chocolate chips on top, serve with graham crackers for dipping.

Na’Cho Salad

1 lb - Iceberg lettuce mix
1 cup Cheddar cheese
1 small can Black olives (chopped)
1 tomato (diced)
1 bottle Catalina dressing
Chicken (diced - can be pre-cooked or fresh)
Nacho cheese doritos (Grab bag size)

Smash the Doritos so they are in bite size pieces. Layer the above ingredients together, reserving some of the Doritos to sprinkle on top as garnish and serve.

Bracciole Roll ups


Bracciole - about 2 pieces per person
Spinach – can be fresh or frozen
Bacon – can be precooked or raw, just make sure to cook before filling steak
Cheddar cheese
Brown gravy

~Lay Bracciole out flat, place spinach, bacon and cheese on meat, roll up in a pinwheel shape and place a toothpick at the end to keep it closed. Bake @ 350 for about 20 mins. Serve with Brown Gravy.

Pasta w/Sausage






3/4 lb pasta (I use Barilla Plus - it holds up a little better & better for ya!)
1 Tbs olive oil
1 lb Italian sausage
1 onion, chopped
4 cloves garlic, minced
1 (14.5 ounce) can chicken broth
1 tsp dried basil
1 (14.5 ounce) can diced tomatoes
1 (10 ounce) package frozen chopped spinach (you can also use fresh)
1/2 C grated Parmesan cheese

~Boil pasta, drain & set aside. In a large skillet, heat oil and sausage; cook through until no longer pink. During the last 5 minutes of cooking, add onion and garlic to skillet. Add broth, basil and tomatoes with liquid.Cook over medium heat for 5 minutes to slightly reduce. Add chopped spinach; cover skillet and simmer on reduced heat until spinach is tender.Add pasta to skillet and mix together. Sprinkle with cheese and serve immediately.

Recipe Round Up!

Quiche Lorraine Breakfast Pie
1 loaf of “day old” bread
1small onion
1 bag shredded Swiss cheese
8-10 slices of bacon, cooked & crumbled
8 -10 eggs
1-cup milk
Salt & pepper to taste

~ cube the bread and layer in a greased 13x9-casserole dish. Slice the onion & layer over the bread, next layer is the crumbled bacon pieces and then the swiss cheese on top. Mix the eggs, milk, salt & pepper and pour egg mixture over the layered casserole. Cover with foil and place in the refrigerator overnight. Bake @ 350 for about 1 hour.

Had this recipe typed up in my computer and thought I would share.

Ground Beef Soup


• 1lb ground beef - cooked & drained (season meat to your liking)
• 1 small diced onion
• 1 Tbs minced garlic
• 3-4 Tbs Worcestershire sauce
• 1/2 head fresh cabbage (diced)
• 1 pkg frozen mixed or soup vegetables
• 1 32oz can diced tomatoes (with juice)
• 1 16oz can beef broth & (1/2 can water)
• 1/2 lb cooked pasta (small) shells - (cook pasta Al'dente so that once it is added to the soup, it will remain firm)

~ Cook the ground beef & onion and once browned & drained add the next 3 ingredients. Cook about 10-15 mins. Add the remaining ingredients except for the pasta. Cook about 20 mins on medium heat. Add pasta at the end before serving.

(This recipe was created by my Grandmother (Peggy Mount) & I based off of a soup that I had at a diner once. It is a recipe that I will always treasure and enjoy very much!)
